As we catch up with the last box from 2 weeks ago, this is the recap with the rather interesting recipes and one familiar one that had a slight twist added to it.

Roasted Nantes Carrots & Broccoli

Usually we aren’t fans of lentils or such and this is a filler meal for this box that we thought that we would take a chance on since it had nantes carrots and broccoli and we like those veggies a lot, however, this one did turn out better than we expected. I have roasted carrots in the oven before but never broccoli and it turned out really good. These boxes may be convenient but I think what I love even more is how it teaches me new things that I haven’t tried before.

Sichuan Chicken Salad
with Chilled Soba Noodles, Cucumbers & Edamame

I can’t remember the last time I had soba before this meal. That is how long that was and it might even have been on a plane flying through Japan to go to China or Hong Kong or something like that. Sichuan chicken automatically means this dish packs in some heat. If I remember well, the spice pack for this was peppers and chili and so on. But the balance of the noodles and the chicken and the veggies balanced everything out quite well. It was pretty enjoyable to eat.

The one thing I learned when choosing meals is that when you some kind of bowl option, its usually easy and delicious. Vegetarian spring roll bowl was the kind of thing that had me curious plus I had no idea what jade rice was and was slightly curious. As I was making this, the 20 minutes time was increased solely because there was a lot of prep work like cutting a ton of veggies and mangoes and such, so I took much longer than that, but then everything other than the rice and roasted peanuts is eaten raw, so it makes up for other menus and their cooking times. However, consider this one a surprise. Jade rice was good. The balance in the bowl with the peanut sauce was really delicious and the freshness of all the veggies and mangoes balanced each other out. It gobbled it up in one sitting (which is rare as some of these meals, I split them in two.)

Chicken Breasts

The reason I wanted this box was for the return of the chicken and delicata squash dish. Much to my surprise and slight disappointment, it felt that the menu did change. Now they have this yogurt dressing which we had to put on the side and then improvise so we just used the honey to drizzle over the dish. The chicken spice and a seemingly recent obsession of Goodfood is Berbere spices which is a really spicy blend. Luckily we drizzled honey on top or else it would have been worse in the spicy department. I get that the blend asks for the yogourt to probably soothe the heat but us lactose-intolerance folks can’t. Oh well… don’t get me wrong though. The meal itself other than the mouth on fire part is still really good. Delicata squash and nantes carrotd in the oven are awesome as always and the chicken is made so juicy and tender with the partially covered cooking method and such.

This wraps up this recap! Goodfood has added to its food with a smoothie menu and being a current client, they had a deal offer for the first one so we are going to give that a shot. However, my order was processed late so it missed the cutoff of this box, bumping it to the next one in December.

Recap: Goodfood #27

Welcome to the next recap of Goodfood for last week’s box! One repeat and a few that sounded pretty good. Bowls usually are surprisimg winners, burgers always have a nice twist and well, sometimes meatballs and couscous are the simple combo that we need.

Grilled Tofu Dragon Bowls

Tofu isn’t our cooking specialty so a lot of it is either at my mom’s or when we get a Goodfood box. My husband isn’t a huge fan of it either. We ended up getting this because we have loves past meals in bowls. Granted, usually it is something I have generally tried before and this one, I haven’t. However, the tofu and the red rice is super nice. The sauce here is amazing. My only issue was the raw veggies which I went ahead to cook because I had a part of it raw and honestly didn’t enjoy it at all. I’ve always liked my vegetables cooked so that is honestly a personal preference.

Chicken Yakitori

The repeat here is this chicken yakitori which still remains as delicious as what I remember. On top of that, I always forget to do it for the Battle of Ingredients but the recipe calls for roasting chinese broccoli in the oven and the leaves turns out like making kale chips. It comes out some delicious flavors and its mostly seasons with salt and pepper which is all very awesome. Plus, Jasmine rice is my favorite variety of rice so everything here really justifies why I like this meal a lot and enjoy making it also.

The husband took care of this meal and the next. Its been a crazy week for us so these meals had a lot of it just being myself eating it and him only tasting it. I’m not going to lie that I ended up skipping most of the salad because of the horseradish. They gave a warning of the spiciness of it and washing hands afterwards. Luckily, my husband put together only a little bit of horseradish so it worked really well without burning my mouth. The chicken spicing with the paprika and garlic is really delicious. I’m adding this recipe to my chicken burgers ideas whenever we ever think about it and want to change up from beef.

Finally, we wrap up with the pork meatballs and roasted vegetables on couscous. I have to say that the entire meal here is pretty well balanced. The tomatoes add a more acidic taste as tomatoes usually do with their more sour flavor but it works to give a lot of balance with the other vegetables added in here. The highlight here is the wild jungle peanuts which are specially picked from some region (Amazon, maybe? I can’t remember…) but taste pretty much like a peanut. The couscous is my issue as I had to pick out  the lemon balm because it was just too much in it and was so strong. Other than that, this was a pretty decent meal. I just need to remember to cut the onions into smaller pieces so the meatballs don’t have such coarse onions, making it stand out a ton. However, the spices are quite delish.

Overall, this was a pretty decent box. I liked everything fairly well. There were some issues here and there that makes me say that I love it with the obvious exception of the Chicken Yakitori. One more box next week and then we made the decision to drop the meal boxes to monthly basis for a while so we clear up some of our frozen meats in the freezer and eat some garden veggies from our garden and my mom’s garden, which she’s been sharing with us.

Goodfood Recap #24

Back to back weeks going on. Sorry for the delay. We’ve actually been really behind in cooking in general but we finally did finish up this box.

Do note that due to various reasons, we are again decreasing the frequency of Goodfood boxes. With our schedule, its actually becoming more of an inconvenience plus, we just can’t seem to decide on some of the recipes so we altogether decided to let some weeks by. It all works for the better financially also since these boxes are convenient but as we all know, convenience usually comes at a price. And well, July and August have been quite taxing on the wallet so we have to make our necessary cuts.

Without further ado, lets check out last week’s box!

Salmon Burgers
with Remoulade, Red Cabbage Slaw & Roasted Potato Fries

My husband is a burger fan and we usually tend to try out the burger recipes. I can tell you that salmon burgers aren’t quite our cup of tea. We love salmon but as burgers and with this remoulade, it just wasn’t up our alley. The best part of all this was the roasted potato fries and well, you will see that its quite a frequent appearance in the meals we have been choosing. I’m sure salmon burgers are good for some people but a mix of factors here just didn’t work for us.

Spiced Chicken
with Bell Pepper & Cucumber Coucous Salad

You can’t go wrong with chicken. Over and over its been proved to be right. It has been a while since we’ve had a couscous meal so this was really fresh to have the bell pepper and the cucumber with the salad. The chicken spices were really good. Its a simple meal but very delicious.

Grilled Greek Chicken
with Prune & Cerignola Olive Sauce, Roasted Potatoes & Arugula-Almond Salad

When I first looked at this recipe, I was starting to worry about the prunes and olives and the taste that it would give. Surprisingly, it works really well. The potatoes were good, The chicken spices were simple and the prune and olive sauce worked so well with everything. My only issue is that it had arugula and I’m just not a big fan. Luckily, whatever was left over, my husband cooked the salad and paired it with another meal afterwards.

Pork-Lemongrass Skewers

The highlight of this box for sure goes to these pork-lemongrass skewers. It caught my eye when I was choosing this as one of the recipes. All the cooking goes to my husband as I’ve been busy with Fantasia Festival so he’s been taking care of a lot of these things for me. Crispy rice has appeared a few times in recipes and they are really good. The skewers and pork lemongrass is really tasty and there’s ginger in there that subtly was setting my mouth on fire and I couldn’t pinpoint what it was. My husband cooked the salad instead of leaving it raw which I love because while I’m slowly getting back to eating raw vegetables, I do like it cooked.

Overall, a pretty decent box. There was some surprises like the prune and olive sauce for the chicken.
Some things delivered like the pork-lemongrass skewers but of course, there was also the disappointing salmon burger.

Goodfood Recap #23

It sure feels like a while since the last time I wrote a Goodfood recap. The only reason is that the recipes weren’t quite to our liking so we decided to just skip 2 weeks. Now its back generally to a schedule that we like. Without further ado, here’s the recap for last week’s meals!

Shrimp Boil
with Summer Corn, Roasted Potatoes and Green Salad

Sorry for the scattered look on this one. We kind of had this one in a scattered manner as well. This was a pretty summer themed meal and I loved the making the shrimps and corns and potatoes together. The spices were delicious. I didn’t get the salad but my husband did. I believe the dressing smelled pretty good.

Grilled Vegetable Bowls
with Ginger-Soy Sauce & Edamame Rice

I’m going to admit right now that last week was hell and we’ve had a whole lot of delays on cooking and just had a ton of leftovers and stuff. Its re-adapting to some things in life that has surfaced. It changed the routine I had and who knew that it would be delayed like this. When we got around to making the vegetable bowl, the zucchini was already done for, making this bowl slightly sad. However, the edamame rice was delicious. The veggies and the spices were really great as well. Its all very lovely along with the ginger-soy sauce also. Maybe we will remake this one day with the yellow zucchini.

Soy-Maple Chicken

The soy-maple sauce was quite tasty here. The oven-roasted sweet potatoes also had a great recipe. Simple and easy. I’m not much for scallion so I didn’t go and eat a whole scallion stalk. Well, surprisingly the zucchini here didn’t go bad so the grilling it turned out great. Of course, the grilled stuff is all my husband’s hard work. This meal does come together quite well.

Herbed Pork Chops
with Pistachio-Mint Salmuera, Grilled Peppers & Roasted Baby Potatoes

The last meal of this box is the herbed pork chops. The spices for the pork chop was absolutely delicious. I’m starting to see a theme in the spice blends and how good they are while all being quite different. My husband handled this meal. The potatoes turned out quite well. The grilled peppers was also quite good. Simple stuff is always the best method in my book. While I liked the idea of the pistachio=mint salmuera, I liked the pork chops without that topping.  I didn’t mind it much but the spices already had enough balance in flavor to make it all work. But then, I refer back to the simple things for myself that always work best that I mentioned before.

Overall…

It was a pretty decent box. Anything that didn’t go well was because of my procrastination. The spice blends in the meals were very good and gave these meals their own distinction. There are some simple elements here that worked very well too.

With that said, we have a new box this week and its already having its delays with all the events happening in town.

Recap: Goodfood #15

Time for another Goodfood recap!

As I struggled with a few things last week, my husband was a major champ and came home from work and still helped me out with cooking the meal. Bad time management on my part due to little bit a temporary dose of depression and some stuff on my mind. Luckily, we did get through the week and the meals all turned out really well. A little mixed bag for this box.

Haddock with Chermoula Mejadra & Roasted Brussel Sprouts

First up is this lovely haddock. We are a big fan of trying out new types of fishes. I believe another box at haddock and we liked it. To be honest, we were slightly skeptical with this one but it was an absolute pleasant surprise. The rice was spiced wonderfully and there was a lot so we ended up making a fried rice with it for lunch. We learned how to make crispy onions in the pan and it turned out really delicious. My husband loves the smell of onion so he was elated. Not a whole lot of preparation and the first part is multitaskable which is always important. The final product was pretty delicious.

Spiced Maple-Lime Chicken with Mashed Sweet Potatoes & Blistered Green Beans

The highlight ingredient of this box to discover was maple butter which is in this menu. If you have gone to a sugar shack and had that dining experience, you come to expect these bold sweet flavors on anything with maple. In this one, it was a nice subtle flavor that complemented the chicken really well. The mashed sweet potato was tasty to balance out the meal and the green beans gave it a lovely veggie crunch. This one was one of our faves in this box for sure!

Szechuan Eggplant & Tofu with Jasmine Rice

This was our vegetarian pick of the week and also the Chinese dish. Its a tad spicy but the chili did have its seed taken out so automatically that helps a ton. My husband isn’t a big fan of tofu or eggplant. This one uses a firmer tofu and fries it so it had a lovely taste and texture. This dish came together much better than I expected and other than eating it all in one go felt like my mouth was on fire (just because I don’t eat spicy stuff a lot), this one is was pretty good.

Ground Beef Pizza with Crispy Kale

Finally, we ended with the ground beef pizza. This one did get a advisory recall on the beef afterwards but we cook our beef well done all the time and nothing happened for us. This pizza though is the highlight of the box. We loved every element of it from the simple tomato sauce to the nicely seasoned ground beef onto a crispy kale to top it off. It was awesome. My husband had it with the cheese and my side was without and we both loved it the same.

Overall, this box was great. We were hesitant about the recipes we chose but they all turned out to be pleasant surprises. Our favorite was absolutely the ground beef pizza however, that maple butter was delicious with the chicken and the sweet potatoes. I’m definitely going to make more mashed sweet potatoes from now on.

Recap: Goodfood #7

Last week, we took had another Goodfood box. Its been quite nice to have these coming in although it makes for some late night cooking sessions since I mostly take these for lunch and my husband has it for dinner. Our working schedules being in the way of actually sitting down and having these meals together. However, it does help cut down especially since I’m slowly getting a little faster. Some meals like one of these actually came rather close to the time they said it would take which made me feel quite good about myself. This box was one that we took quite a few chances on so let’s see how it turned out.

Kicking us off, we start with…

Chef Garnier’s Thai Shrimp Curry with Bell Pepper, Tomatoes & Couscous

Chef Garnier’s Thai Shrimp Curry

This box’s highlight menu is Chef Garnier’s recipe for Thai Shrimp Curry. I have to say that this one was a delight. It had a bit of heat but I was okay with it also. The sauce was delicious and we put the couscous as the bed and it meshed so well to give this nice consistency and texture to the whole meal. We’ve made a few curries from these boxes (not always Goodfood) and this one is hands down my favorite. I’d make it again (or order it again if it showed up on the choices). An absolute great start to the week.

Chicken Piccata with Fresh Gemelli Pasta & Garlic Chives

Chicken Piccata with Fresh Gemelli Pasta

If there was a meal that highlighted this box, it would be this one. Chicken Piccata and fresh gemelli pasta. I already like gemelli pasta to start with and I love chicken and the sauce here is fantastic. The cooking process got a little dangerous for me because the oil splashed up and grazed my cheek which was painful but the husband took over and got it all under control. It was so delicious and honestly, if I knew where to get capers, I’m down to make this one again. Well, maybe prep it and have the husband do the actual cooking.

Black Bean Burrito with Mango, Cucumber and Roasted Pepper Salsa

I’m really sorry that this doesn’t look like much. The way to do it would be to take pictures of the salsa, the cooked ingredients before stuffing it up because it turned out to be quite a bit so I ate it pretty deconstructed. The rice was very good for the burrito however, the salsa is great on the side. Having it on the inside had this weird taste. It was fresh and I like mangoes so it didn’t bother me too much but I’d have had a bowl of mangoes on the side and added in the cucumbers and roasted peppers to the rice and black bean blend. It was a nice thought though and it was pretty alright.

Beef Lomo Saltado over Roasted Potatoes with Soy Sauce & Spicy Jalapeno

As you can see, the potatoes were a tad overcooked. Not sure why. But my best guess is either the cook time was a little too much (which it obviously was) and that the potatoes were not sliced thick enough. My husband ate both of these ones because I can’t have jalapeno and beef isn’t my favorite type of meat. He only ended up using half of the jalapeno pepper. It seemed decent.

Overall, this box was pretty good. We like two of the meals a lot. The burrito was pretty decent as well. I wouldn’t eat it as a complete burrito but as deconstructed, it was still pretty tasty. The preparation times were all very decent and nothing too crazy. I like the fact that Goodfood uses the oven more with its recent recipes. Ovens are great for multitasking and its something I implement a lot in my everyday cooking as well. If not, its just boiling everything in salted water when I want to eat healthier. Still enjoying these boxes quite a bit.

Recap: Goodfood #6

Don’t worry! No slacking off on the horror marathon. Regular programming resumes later today (or at least it should since I’m writing this one before the next one).

Goodfood update again. This box is one of those boxes that really caught our eyes as it uses some great ingredients and everyday stuff and just twists on the sauce and stuff. A lot of untreaded territory here so its fun to try out. Most of it worked out really well, except for one that really might not be to our tastes so much.

Chef Garnier’s Sesame-Crusted Chicken with Sweet & Sour Veggies & Matcha Rice

First up was the Sesame-Crusted Chicken. Its pretty cool because I’ve always had an issue with breading things and this recipe let me learn how to figure that part out. This meal turned out quite good. Actually, everything here worked great for the chicken and the veggies. The sweet chili sauce for the veggies was a good balance to the meal. However, the matcha rice wasn’t doing it for us. I already had a suspicion about it since I’m not  a fan of matcha tea in general however, my husband is very picky with the teas that he likes so it was a hit and miss. However, matcha is a powder so it was used for the rice and it was okay. Can’t say that we’ll ever make the rice again but the chicken and veggies are a hit.

Tofu & Shiitake Mushroom Dumplings with Cucumber Salad

Next up is the vegetarian dumplings. This was an all around win for us. We don’t use tofu ever at home although I like it when my  mom makes it. However, I’ve never really figured out how to incorporate it into our meals and my husband isn’t a fan of the texture in general. These dumplings were really cool as it blends the mushrooms and the tofu together for the filling and the sauce is quite easy to make. I let my husband have the cucumber salad which he liked a lot as well. We are slowly trying to eat healthier and possibly seeing the potential having the occasional vegetarian meal and this one is definitely one we’ll keep on our minds especially since I love dumplings so much!

Spiced Pork Chops with Roasted Delicata Squash, Brussel Sprouts & Hazelnut Vinaigrette

Pork chops are a frequent appearance in our house. Mostly because meats are overall quite expensive and pork chops are usually the most cost efficient option. This one was so great. It had brussel sprouts and the vinaigrette was delicious especially since we’ve never used hazelnut to put together a dressing like that. There was a hint of sweetness from the maple syrup (I believe). I’m a fan of squashes in general but my husband is quite picky with them. However, he loved the delicata squash which is the first time I’ve ever made them and they are a win for us both. We loved them so much that I went ahead to the grocery store a few days ago and picked up some more.

Tourtiere-Spiced Meatballs with Mushroom Sauce & Roasted Veggies

Finally, the last choice were tourtiere-spiced meatballs. I’m usually on the fence with the meatballs meals. It always feel odd to use meatballs without spaghetti. Another thing to note here is that I replaced the green beans with brussel sprouts. I guess I could file it under a slight complaint is that when Friday night came around (which is about 5 days since we received the box), the green beans weren’t looking too good. I’m guessing if I waited another day, mold would have happened. Anyways, to be safe, I threw them out and replaced the veggies with what I had on hand. However, the meal was really great. Beef is not my first choice however the meatballs tasted good and the tourtiere flavors are definitely there. The mushroom sauce turned out a little too thick for us however the taste was also on point. The veggies were good also.

Overall…the last week’s box was pretty good. It was a win on all fronts. Sure, the matcha rice didn’t work with us quite so much but everything else was pretty awesome. My fave meal of this box (and its hard to choose) would probably be the pork chops although the dumplings are quite close behind.

Recap: Goodfood #4

I had to take a break this weekend. Sorry about that. For many reasons, it was one I had wanted to focus on real life things. Happy stuff! Plus, it was super humid and hot so being in the office was like sitting in a preheating oven. Regardless, we stayed in mostly and did a lot of gaminh and cooking. Thanks to finishing up the last two meals from last week’s Goodfood box.

Seared Haddock with Farro and Orange-Fennel Salad

A lot of new or ingredients we rarely use for this recipe. Haddock isn’t our usual choice of fish. And the fish part of this was tasty. Farro was new to us and its pretty much like a harder texture of brown rice ( or maybe it is brown rice…I should research it further). I’m not a hard rice sort of fan unless its in sweet congee. I didn’t eat the orange fennel salad mostly because of the not eating raw veggies thing but my husband did and his words, it was okay.

Easily one of our favorite meals from this box. Its also vegetarian so thats saying a lot. Its juicy. The bread is made with a crispy outer crunch and the veggies, peppers, zucchini and multicolor chery tomatoes had a nice balanced flavor. You can make this for a fancy bbq sandwich idea if you’d like plus, the sundried tomato hummus was absolutely heavenly. Yummy!

Chinese Five Spice Chicken with Snow Pea Tips, Beans and Quinoa Salad

I’ve had five spices flavored stuff when I went to Hong Kong however, since my mom’s not much for spicing up food too much, I’ve never had much exposure. With that said, trying out five spices, it being a chicken dish and the fact that it had snow pea tips (which is one of my ultimate favorite veggies) made this one so awesome. However, we did make a little twist to this and cooked the snow pea tips as well with all the ingredients that would have gone in the salad which actually ended up fantastic. I’d do this one again any day. Now to figure out where to find five spices in the Chinese supermarket nearby. 😉

Chef Jonathan Garnier’s Fresh Tagliatelle with Lebanese Moussaka

Definitely an interesting choice here. We’re big fans of fresh pasta. I’d like to say that we’ve actually been buying fresh pasta options more than the dry ones. We also don’t eat chickpeas or eggplants a lot either but this one had some nice spices. Not to mention my husband did a fine job of putting it together. Not sure what Lebanese Moussaka was before. In fact, I’ve never heard of it before and it was pretty good. Definitely a nice way to incorporate chickpeas and eggplants into everyday meals.

Unboxing: Meowbox [September 2017]

Happy Friday, my lovelies!

A surprise Meowbox unboxing today! Earlier this week, I received this September box which I didn’t order since mine is due for next month. After contacting customer service to make sure I didn’t have someone else’s box, they explained the situation. Long story short, this turned into a little gift for us. A lovely gesture even if it was an error that caused it. However, I appreciate a ton. Next box will still come as planned but we have this one in the meantime. More unboxing vids! That makes me happy!
