Recap: Goodfood #28

We’re back with last week’s Goodfood meal box. This one has one repeat in it. However, a lot of them looked so promising that we decided to give it a go. Just a note that if you follow this series specifically, we’ve dropped from biweekly to monthly subscriptions of the box. The main reason is that this box was always structured to be a balance for when we were busy with stuff and event coverage season is pretty much done for this year except for one more in November so we are getting back to finding cool recipes to work on. I’ll share some of those here whenever we try something new on our own.

Fresh Tagliatelle with Chicken & Sundried Tomatoes

My husband loves to eat pasta. Honestly, I can get pretty picky about it. We have our definite fave recipes. Surprisingly, tagliatelle is never our first choice. My husband isn’t a big fan of the texture. He’s never been one to enjoy the thick noodle variety. As for myself, I actually quite like it but then stick to the more traditional normal stuff. Either way, I chose this recipe because it doesn’t have a cream sauce. Its so rare to find recipes, unless I make it up myself to not have that rose sauce or white creamy sauce. Lactose intolerance definitely doesn’t work with pasta so well so this recipe looked simple and delicious with all its ingredients. It lived pretty much up to its standards. Plus, I multitasked like a beast and even got the chicken perfectly cooked, which is super rare. I’m really not that great of a cook..more a baker at heart. The meal here works really well. Its nice and simple and everything blends so well together and has a decent amount of protein and veggies. Delicious stuff! My husband doesn’t admit it but he ate everything else but the noodles so I think it worked for him also but for us, we’ll probably go with some other type of pasta using the same recipe.

Braised Berbere Chicken

I’m not sure if you know what Berbere is but we sure didn’t. However, it apparently (if you didn’t already know), is a common Ethiopian spice blend. Its a tad spicy if you look at the spice combination. Matched up with the couscous which this time is made in water rather than just soaking in hot water in a bowl, it was such a difference in fluffiness. I liked it a lot more than usual. Plus, its more neutral flavor compliments well with the strong spices used on the chicken and there’s a decent amount of veggies to also make it a very tasty and balanced meal. This was pretty much our experiment new flavor of the box and it turned delicious.

Our repeat menu of the box! Actually its the third time, that I’ve gotten this recipe. It shows how much we love it. Especially since I’ve been having massive dumpling cravings of late. This was the first time my husband had to help out with this one. It turned out every bit as good as I remember it. I imagine you will see this one again whenever it pops up as a choice. Right now, its just waiting for that veggie banh mi that we love so much to come back.

Pork Katsu
with Sticky Rice, Yu Choy & Wafu Sauce

The final meal of the box is Pork Katsu. I’m kept think that we had done this recipe before but I think its because I had almost gotten it once before but change it last minute. Either way, props to the husband for stepping up and getting the pork katsu done on point. Its pretty much the replica of the recipe card except without the sauce, because I just keep forgetting to put it. Its a Wafu sauce that goes on top and it would work great with it. Calrose rice is what’s here so it has that sticky rice texture. We like yu choy quite a bit and the pork katsu turned out pretty good. Its a nice contrast to the heavy flavors in the rest of the box, particularly the Berbere chicken earlier so this ended off the week with something a little more subtle in taste was nice. As good as this was, I might not exactly choose it again unless for a filler when something else I have comes up and its a choice.

Overall, no doubt that the peanut butter dumplings were my faves. But I think the surprisingly good discovery was the Berbere Chicken which was delicious. However, on an everyday cooking idea recipe, the tagliatelle is definitely in for an easy pasta night idea except with something other pasta.

Goodfood Recap #25

Time for the next Goodfood recap! Its been a while that we’re doing something non-movie related. I’m sorry for it all. Fantasia Festival and work combined simply ended up ruling my life despite wanting to do other posts. Anyways, Fantasia is over and while I still have some little things left to wrap up, we’re back to normal programming!

This was last week’s box and it was a tough one to go through because of the fatigue and scheduling and overtime all combined together. Luckily I did two of the recipes and my husband helped me out with the other ones and we managed to get it done.

Togarashi Chicken
with Blistered Shishito Peppers & Crispy Rice

If you like spicy food, this Togarashi Chicken is right up your alley. Luckily, we’ve been getting in the hang of having some delicious spicy seasonings and I was really excited to try out this recipe. I’ve never had shishito peppers but it was pretty good and it had to lovely balance of textures and flavors with the crispy rice and the chicken. I have to say that we’ve had a few meals with the crispy rice and its a great way to make it. Its fairly decent to make also so that helps. Although to be honest, I would get some normal bell pepper pieces or some sweet peppers instead since it can get a little overwhelming.

We don’t eat steak a whole lot so this is a treat. We did end up replacing the baby kale with our own homegrown kale because it wasn’t looking too nice. We don’t usually have a lot of issues with the freshness and the weather has been really hot so even our garden isn’t doing great so it was nice that we had some backup. It was kind of our fault to have waited 2 days before using it, which usually is fine. Either way, just a point and not really a complaint. However, the meal itself did turn out really well. Barley is one of those ingredients we don’t have our house so whenever we get these boxes, we learn a little more how to use it. With the flavors here and everything, it blended very well together. it was an easy meal to put together, the shortest in this box if I’m not mistaken and it worked well for the busy and crazy week that I had gone through.

General Tao Cauliflower

Starting these next two, my husband was the one who stepped up and took over to cook because I was just swamped with everything. Lucky because especially this one, it was quite technical and I’m not great with any flour batter and fried sort of meals. However, I honestly loved this meal a lot because of the cauliflower and how it was done. Combining that with the sauce (which was the only part I made along with the spinach chips), it actually was so delicious. It worked with some delicious jasmine rice and a crispy spinach chip along with a tasty cauliflower to just have enough crunch to make it so great together. It a tie between this meal and the chicken for my fave in this box for sure.

Spice-rubbed Pork Chops
with Plum Chutney, Charred Kale & Black Rice

Last up is the spice-rubbed pork chops. Its kind of weird to think of plum chutney and I only eat black rice when my mom uses it in this special sweet congee that she makes. Suffice to say that I’m not skilled at eating it. This one was a little toss in the air to just fill up the last meal and it turned out as a pleasant surprise. I can’t say that I’d want to make it again but the plum chutney came out really great. The charred kale is good as always and keeps it healthy. Black rice has a different texture and is a bit more chewy but it also has a nice flavor. This one does come together well enough.

Sunday Cooking Part 1: Minestrone Soup

Sunday is my day to cook dinner.  Most other days, my boyfriend does the honors because of work schedule of course.  With dragonboat season being on break right now and work calming down a bit, I’ve had time to research and make a decent meal from scratch.  After talking about it for a while, I finally cracked down and made Minestrone Soup.

I’ve never made soup before.  The closest thing to soup I’ve ever made was simmering chinese vegetables and then it would turn into a nice little soup once you put in ginger.  So this was fun but had so much preparation.  I think I spent 30 minutes just chopping all the ingredients and vegetables, etc.  Other than that, it was pretty easy to do.

I found this recipe in a newsletter from my gym (that I used to go to).  I don’t understand why they still have me on the list, but at least its healthy.  It was originally a Turkey Minestrone Soup but my boyfriend and I both prefer Vegetable Minestrone Soup. So as usual, I’ll post the actual recipe and then show the modifications I had done.  I have to translate from a French recipe so if you see any measurement errors, please inform me.

Turkey Minestrone Soup

Makes 8 servings

Ingredients:

1 tablespoon olive oil

2 cloves of garlic, minced

1 big onion, diced

2 medium carrots, diced

8 branches of celery, cut in pieces

8 cups (2L) of no-fat chicken broth

3 1/2 cups (871 mL) canned conserved tomatoes, diced

2 cups (500mL) cooked turkey, in cubes

2 2/1 cups (500mL) canned white beans, drained and rinsed

2 cups cooked macaroni (preferably whole wheat)

1 teaspoon dried basil

Salt

Pepper

2 cups spinach, chopped coarsely

Directions:

1) In a big pan, fry garlic and onions in oil for 3 minutes on high heat.  Add the vegetables (carrots and celery), broth, tomatoes, and basil and bring it to a boil.

2) Reduce the temperature and let simmer for 30 minutes or until vegetables are tender.

3) Add in the turkey, the beans, macaroni and the spinach and let it cook for around 5 minutes.  Season with salt and pepper and serve.

Here’s what I did: I made Vegetable Minestrone.  I didn’t use turkey instead I made another dish which I will post up tomorrow.  I didn’t add macaroni, spinach or basil.  No macaroni because my boyfriend didn’t want it and well, I just forgot to buy spinach altogether (and the basil too).  Also, I replaced the white beans with green ones and I bought them fresh instead of canned.  That didn’t affect the taste in the end.  Believe me on that.  It had plenty of taste as is.  Also, in my terms, I always believed that beans are considered vegetables so I just added it along with the carrots and celery.  I don’t think it made too much difference.

In the end, it turned out really good.  The taste was perfect, there was lots of veggies, everything was balanced, not too sour either.  I think we’ll be exploring more soups.  Meanwhile, Part 2 is coming up tomorrow!
