TV Binge: Nailed It (Season 2, 2018)

Probably one of the fastest TV binges ever! While I have a ton of TV binges I have to work on, Nailed It is surprisingly easy to write about so during this taxing week, I decided to put a lot of reality TV binges in advance.

Nailed It is a pretty lovely concept and it works overall as a reality TV show. If you want the nutshell version of how I liked the first season, I liked it enough for me to hop right onto it the first weekend after it launched and then probably finished it over 2 days. Its fairly short episodes and there is only 6 + 1 episodes so its not exactly impossible to do either. In some ways, the entertainment value is there. Nicole Byer is great at her job. I know some people think she is annoying to watch but I actually think in Season 2, her and Jacques Torres has found somewhat of a balance and chemistry to make it work. I like her bombastic personality and its that personality that makes it fun to watch. The same goes for the judges who make their way onto the show which all have something to offer and add a little light to everything.

However, sadly, I do feel that Nailed It in Season 2 has betrayed its concept a little. Even if you went to Wikipedia or IMDB, they call it an amateur bake-off reality TV series. However, it didn’t quite go that patch especially in the first round of challenges as we saw watermelon carving and then a football field reconstruction where the extend of making food was organizing, chopping and making guacamole. All very noble things to learn how to do and hard to put together but doesn’t quite fit into the formula that the show is trying to sell initially. Maybe its because I watched this for the amateur baker angle that it disappointed me. Technically, I mean, this all does fit into the idea because Nailed It is just about hot messes that happen, right? So, you could apply it to anything that can be recreated.

Fact is, I’d be lying if I said that Nailed It Season 2 wasn’t entertaining. It was pretty entertaining and I loved the Queer Eye crossover episode which was just too short. That episode actually got me to sit down and actually get started on that series, which I’ll be doing a TV Binge on very soon for both seasons because well, while this one I’ve only watched once since the end of June. I’ve already watched Queer Eye both seasons twice. I’m going on a tangent so lets bring it back to Nailed It! Entertaining still but not quite what I expected with the additional diversity of the projects. When I get to the new reality TV Baking competition series Sugar Rush soon also, we’ll talk about how this could go so many different themes instead of going into these odd non-baking challenges. I wouldn’t be so disappointed if it was baking savory snacks to be honest. Its just that baking thing that some challenges was missing and I felt like Nailed It lost its way just a little every once in a while.

But then, if Nicole Byer is back for Season 3 of Nailed It, I’d be down to watch some more.

My Weekly Adventures #62 I’m 32!

Weekly Adventures

Welcome back to this edition of My Weekly Adventures!

This post comes a little later than usual. To be honest, I was just taking it easy since I took today off to relax and enjoy my birthday. I am getting older and this past week has been busy with new project launch and lots of catch up on stuff to be more on track and organized. Its been an uphill trek after being functional again a few weeks ago with the new PC. Luckily things are going very well now and I’m hoping it will go that way. Although, the last few days, the stats were absolutely meh but after so many years of doing this, I love just sharing what a little bit of everything so the stats don’t bother me anymore. Maybe its the enlightenment of getting a little older. 😉

This is going to be a really short one since there honestly isn’t much to recap. I was looking back and realized that the last two weeks didn’t have much going on. I debated about posting today but hey, why not! A little bit of something is better than nothing, right?

Getting Ready For Running Season…Very Slowly

The snow is melting away in our yard and I can see the tulips starting to come out and the strawberries are sprouting some new leaves as well as some other plants here and there. Which means that as the weather gets a little more stable and mild, I’m getting back to running season. I haven’t ran in a year. In fact, working out has been so sparse in the past year and a half that I really need to get back on track to just basic exercises. With that said, I started scheduling in little improvise workout programs for myself at home, just like 30  minutes of Zumba routines from Youtube 2 times a week. Its going okay…can’t say that I’ve been incredibly disciplined but working out is definitely always in the back of my mind and I make a solid effort to get even 20 minutes in when I have the time.

I’m hoping to start actually running somewhere like mid to late April depending on how much overtime I have at work and how that affects my own calendar.

The Husband’s Birthday Weekend

My husband, better known now as a contributing factor of Game Warp as Stunt Gamer had his birthday last weekend. Yes, our birthdays are a week apart. You haven’t heard the weirdest part yet when it comes to coincidences and our families other birthdays. Either way, for his birthday weekend, he got to relax like crazy and over the Saturday and Sunday, I made it a full day of meals pretty much, there was a brunch, a dinner and a birthday dessert. I posted last week about the dinner HERE. And well, above are the cupcakes (because the cake version of this would be crazy) that I made for him. It was a Chocolate Cupcake with Nutella Filling topped with cupcake icing and a Ferrerro Rocher.

I’ll share the next two recipes very soon. We also went to go see Tomb Raider for his birthday and while the theatre experience has me really angry, the movie itself was pretty fun. I’ll have that review going up very soon as well. Lots of upcoming stuff, right?

New Project: Movies & Tea Podcast

If you missed it this week, my awesome Game Warp co-host Elwood and I started up a new podcast and the debut episod went live this week. We apparently hate free time. Thats our running joke. Between us, we have too many projects and who are we kidding…we love it! Movies & Tea sparks from the idea of each season looking at a different director and their movies. Of course, some will have more than enough movies but we will pick a selection or batch together a few so that the season will be about 6 to 8 episodes long. Right now, we are looking at releasing on a biweekly or once every three weeks or something. We are pretty flexible with the schedule. This is a fun and casual project since we love talking about films off air during production meetings and stuff.

The kick-off director is Paul W.S. Anderson and this episode looks at his directorial debut full length feature, Shopping.

Turning 32!

How about that? Time sure does fly and I’m 32! Honestly, I don’t really feel that different. If anything, with all the projects going on, its making me feel very energetic and youthful like never before. I kind of have to be since it is the gaming scene and embracing new stuff and new game ideas and same goes for the movie industry and whatnot. I feel like the past year, I’ve grown a lot as a blogger and podcaster among many other stuff that I love to do. With that said, I usually don’t like to make a big deal of my birthday so its just been a relaxing day with my husband. We headed for a little day trip out to check out the Dreamworks Animation Exhibit in the Canadian Museum of History before it ends next weekend. Its a ton of fun since other than that exhibit, there’s some permanent ones there about the full Canadian history and its like 4 floors of stuff to look at and its paired with the Children’s Museum as well as includes a Dreamworks film which we missed since we got there too late and it was a decision between seeing exhibits or seeing the movie and just one exhibit. Plus, the movie was Shrek 4 and I stopped watching Shrek after the 2nd one so it wasn’t particularly intriguing. With that said, the exhibit was very unique and I loved seeing the art work and all the sketches and music and more. Super cool stuff.

TV Binge: Zumbo’s Just Desserts (Season 1, 2016)

The Super Bowl weekend just ended and this has been in queue to be written for a while so I figured that we’re in Valentine’s marathon time and desserts are a staple here. I’m not sure I’ll get any desserts done as work has been hectic but I’ve been getting lots of baking ideas and techniques I want to learn from watching this reality competitive Australian baking show called Zumbo’s Just Desserts, hosted by Adriano Zumbo and Rachel Khoo. At this point, I put it on in the background a lot just to keep myself motivated so I’ve watched it a few times to say the very least. With that said, you probably already know how I feel about it.

Zumbo’s Just Desserts (Season 1, 2016)

A competitive baking show? Count me in! Despite my many unsuccessful scheduling to get back to baking, it is still an immense passion of mine. I honestly don’t know fancy bakers around the world so it was the first time that I even heard about Adriano Zumbo. He is paired up with Rachel Khoo who is seemingly not only as knowledgeable about dessert flavors but also quite charismatic to watch as a team. However, their 12 competitors are the real stars here because they are all different in personality and while most have likeable traits and great aspirations and fantastic talent, they also have somewhat of a villainous competitor here who helps balance out the show and really give it some human drama on who to root for.

The show breaks down into 12 episodes which sees the contestant with the lowest score be eliminated from the show in each episode. Each episode consists of two rounds. The first is called a Sweet Sensations task which runs along the theme of a day. There were color coordinated fresh fruits, magic, fire, kids birthday cake just to name a few. The two with lowest scores go into the second round head to head to fight for survival in a Zumbo Test. If you didn’t know Adriano Zumbo before, well, his Zumbo Creations are jaw-dropping awesome. Complex but awesome. And this probably will give a great idea of his dessert creator abilities. In the Zumbo Test, the two have to recreate his dessert in the allotted time. The various themes and absolutely Zumbo’s creations are the highlights here. The struggles and the successes make this show really fun to watch. Its always down to the wire and its really exciting to watch because the skills and ideas are really fantastic and watching them being executed is a lot of fun.

What I did like a lot for the show, even if it felt a little showy and over the top was the location and set design. It had these colorful tones and felt like walking into Willy Wonka factory. Its pretty fascinating and emphasizes on the wonderful world of baking. Well, its wonderful because I love baking. If you put aside the setting, something else I really like is how they introduce each of the plates that the competitors conceptualize in this sketch like below. I think its really neat because you get to see whether the end results actually happens. Let’s face it, the best part of reality TV is that things happen out of their control and its those struggles and how they push through it that make it fun to watch.

Overall, Zumbo’s Just Desserts is a really great show. Its fun and cool and very exciting to watch. There’s a nice balance in the competitors on their different styles and strengths. Zumbo and Rachel Khoo are a nice team together. The setting emphasizes on the enchanting world they want to have here. Zumbo Creations are just from another world and makes me want to work hard to bake better and learn different techniques (although the hard part is everything I do has to have a somewhat vegan twist). I have a few criticisms of the show but nothing that has stopped me from binging it 3 times already on Netflix. I would have loved to see them actually talk out how they determined the scores though as sometimes their criticism seem to not exactly match the scores they give. I’m honestly just hoping there will be a Season 2 soon.

What’s Up 2018?

Hello everyone!

I’ve sat around most of today just resting up and getting back energy from the NYE festivities at our place and doing little cleaning up and such. Its been really fun. Of course, I did promise a 2018 look ahead. Call it resolutions or plans or whatever you’d like. There’s not going to be a ton of change this year however, I’m trying to set some solid goals and keep them going. Let’s call it just updates for all the sections of this blog.

Twitter update

I’ve wanted to change my crappy Twitter handle for years instead of the horrible tranquildr3ams. Emphasis on the 3 instead of the e. It reflects how old I am and what generation I grew up in, I think. With that said, it also looks super bad now especially I’m trying to at least seem slightly legit and get press passes and such. So here we are…after seeing that TranquilDreams and Tranquil_Dreams was taken, I ended up just doing TranquilDreams_

Everything should be updated so there shouldn’t be a ton of confusion.

Blog Plans

Lets start with the blog plans for 2018. We’re looking at Movies, Books, TV Binge, Baking for the main categories and then the Weekly Adventures category will be its own little thing.

MOVIES

As of starting this year, I’m missing reviews for Wonder Woman, Kong: Skull Island, Fantastic Beasts and Where to Find Them and 47 Meters Down. Those will be going up shortly over the next week as I rid the backlog of reviews that need to be posted.

Movie reviews do the absolute worst on the blog as a first impact post however some reviews do have views in the long term. I keep them here because I truly do enjoy watching films and sharing my thoughts on them. Plus, Fantasia Festival reviews do well and I love covering indie films a whole lot. Creative new ideas from these great artists and creators are something I truly appreciate. With that said, I have refrained from reviewing Hong Kong films which most of my cinema roots stem from in the last few years because no one actually reads them. They just are for my own enjoyment. Seeing as this category has so many other talented writers reviewing the American cinema, I’m probably going to dial it down a notch and do more foreign cinema with a heavier focus on catching up with Hong Kong cinema. I miss it so much and maybe it’ll help introduce something new to those of you who are interesting in international cinema. If not, at least I’ll enjoy it thoroughly myself.

With that said, I’ll still review everything I watch and if you’d like, join me on Letterboxd to see how I rate movies since I don’t share ratings here. My username is TranquilDreams.

BOOKS

I fell short of the Goodreads challenge in 2017 on a technicality. However, I can’t remember if I did change my original goal. I might have done it halfway through the year. Regardless, this year’s Goodreads Reading Challenge is at 25 books. I decided to set it a tad lower because I want to jump back into The Classics Adventures. With that said, I’m picking up right where I left off at the end of 2015.

This year, I’m going to work on:

  • Northanger Abbey (to finish the Jane Austen novels)
  • Alice in Wonderland and Through the Looking Glass
  • Jules Verne novels
  • Anne of Green Gables (hopefully) and/or Emily of New Moon
  • Finish reading IT (the break was way too long)

Of course, I’ve grown a profound love for graphic novels and comics along with trying to get some more ebooks off my Kindle. It’ll be a nice mix of stuff but it should be fun. Currently, I have Josie and the Pussycats and a novella to share the review for which will be coming up next before I start the new endeavors.

TV BINGE

TV Binge finally got its own section. I change the structure on how I review these ones with every single series and hopefully this year I’ll settle on a way that I’m happy with. We have more than enough sitting in backlog to get written up: Gilmore Girls Seasons 5 to 7 + A Year in Life, Ultimate Beastmaster Season 2, Stranger Things Season 2 are the priority to wrap up. Aside from that, this year, I’ll try to actually dive more in foreign as well to cover Taiwanese series as well as Hong Kong TV series that I’ve bought for years and never actually got around to watching until this past week off from work.

Of course, for your viewing pleasure, I also have some TV series I want to catch up with:

  • Hemlock Grove Season 3 (Final)
  • The 100 (catch-up)
  • Grey’s Anatomy (catch-up)
  • The Vampire Diaries (up to finale)

Some series that I’ve never actually watched and always get told to watch:

  • Hannibal
  • Supernatural
  • Black Mirror

A Series of Unfortuante Events will get its Season 2 on March 30th so I’m pretty excited about that. 3% also has Season 2 coming up this year as well. Lots of stuff to look forward to.

BAKING

Suffice to say that cooking and baking has truly taken a backseat and it was replaced by Goodfood recap which I have a lot of fun sharing with you all. If you ever see a recipe that you like, don’t hesitate to ask me for it. I’d love to share the link with you. If you are a fellow Canadian and have access to the service and want to try it out, I have free meal vouchers that I can send you so you can give it a go. Just drop me a comment or an email with your email and I’ll get that sent over to you.

I’ve been thinking a lot of cooking more and getting back into the baking groove. People say third times the charm, right? So lets do this again. I’m set on getting this project done even if it takes 10 years. We’re doing the Baking Through Disney goal again. If you are new here, you can check out the page HERE. The progress has been nothing short of sad and pathetic. Don’t you worry! I figured out the Fantasia and the Dumbo baking now and I’m  not going to change my mind. I’ll free up time and get the motivation and we’re going to get it done. I’m going to start watching more of the movies so that at least we have the movie reviews going up to see how Disney progressed while I ponder away on making delicious desserts.

MISCELLANEOUS

  • Music Obsessions: no change, remains on the first weekend of the month
  • Sunday Lists: every other Sunday will have a faves or best to worst list
  • Game Warp Podcast: Updates for only featured reviews. I urge you to subscribe to the channel for other reviews or like our Facebook page

Big Change in Setup: My Weekly Adventures has the biggest change. I’ve pondered for a while about this. I used to post gaming related stuff on the Tranquil Dreams Youtube channel. With my increased love of video editing, I’m planning to revive the channel. I’m still trying to get that movie-related project going however I’m not really happy with the angle I chose so I’ve been thinking about it more. Unboxing only still Meowbox so thats going to be very minimal. With that said, I might start doing some vlogs for the Weekly Adventures. Who knows, the blogs always been about adventure so we’ll see where thats going to go.

Personal Life

This is getting super lengthy! This year’s personal goal:

  • Be more organized
  • Less procrastination
  • Eat Healthier & Get back into a workout regime

My Weekly Adventures #51

My Weekly Adventures

Hello everyone!! Welcome to the next Weekly  Adventures! This will be a slightly shorter one with less fluff or serious stuff mostly because tomorrow is going to be the October marathon announcement or kick-off or whatever! It was why I slightly hesitated to do a Weekly Adventures however, why not, right? Overall, it was a pretty chill half a month. The first week of it didn’t really have anything in particular however the last weekend to this one has been a little more eventful.

Rock ‘N’ Roll Oasis Montreal 2017

In celebration of the Canada 150 and the Montreal 375, this year’s Montreal marathon took place over two days instead of just the Sunday. Obviously, I only was a part of it because of my friend who usually needs me to help with drop off and moving the car downtown where the race ended. This year was pretty cool as because of the event closing a wider area, I ended up having to change where I parked which came with its problems such as discovering where the boundaries were and figuring out where to get some tea in the new area. I work in Montreal however I don’t venture quite as much in the area near the LaFontaine Park surroundings so wasn’t quite so familiar however, I did end up finding some breakfast near the Berri-UQAM metro at the bus station and for the first year, ended up watching the race in the middle of the course. It was pretty nice with a live band and water stations and everything. Anyways, it also happened to be the hottest weekend of the summer, hitting the 40s Celsius in humidity and the full marathon was cancelled. However, the weather really took a turn around and I think because of the heat, everyone wanted to just mentally find that extra gear to get to the finish a lot of faster. Still, the event was cool as usual.

Baking Date

Last Friday night, I hung out with my baking and travelling friend. Its always nice to hang out with friends after a long time and we had decided to the weekend before due to her acquisition of many apples because this is the apple picking season. The original plan was to make apple pie however due to time running late and whatnot, we ended up making these little apple galette and I learned what pate brisee was and that was super cool. I’ve always wanted to make them and never did but they turned out to be pretty simple. Plus, its always fun to hang out with this friend. Hopefully, I’ll get my finances in order and we’ll be able to head on another foodie adventure to Toronto soon.

Battle of Ingredients Gathering

This month’s Battle of Ingredients will go live at some point next week. However, we had our gathering for it. We decided to do an early fall BBQ event. The weather’s definitely dropped since the last month and that weekend before with the  40+ Celsius temperature. We’ve been in the single digits the last few days so its been a sudden hit of cooler weather. Either way, this is coming up and we had a little Moon Festival twist since that’s also next week. Look out for that if you’ve been following it! 🙂

Moon Festival Early Celebration

Moon Festival is officially next week however, we got together earlier for an early celebration as my husband has work during dinner time on the day of. However, I will still have one more dinner with my mom on the day of. Its always nice to get together for dinner.

What’s Up in 2017!

2017 is here! There will be some changes around here. Some new, some old, not a whole lot swapped out as you will see soon below! I have an issue of letting go, maybe… Its okay though, it’ll all work out! I haven’t talked about resolutions for a year or two here but I feel like I probably should because that explains some of the changes, which won’t really make a huge impact for any segment in particular but will keep myself accountable for certain things.

Baking & Recipes

Its been a rough year for recipes. I’ve only added maybe somewhere around 10 to 20 new recipes this past year. I’m a little disappointed with myself even though we did have the additional unboxing for Miss Fresh (which will continue this year).

New Cooking Project: I do have some news on a project in the planning with my awesome childhood friend, Starry Traveler. She’s very much busy with a lot of her personal life stuff of late and her blog is less active but we have been talking about a cooking project. This project will hopefully open our horizons to new ingredients and recipe ideas. We are planning the first one some time later this month and I’ll have an announcement post soon. All details on frequency and whatnot is still being decided.

Disney Movies

Baking Through Disney: I started this one back in 2015 and only TWO movies have been fully complete with the baking projects. And I have the 3rd review done but then got stuck on Fantasia’s recipe to make. It is what threw me off. So, I’ve made the executive decision to put that baking on hold and jump forward to the next movie, Dumbo. There is a solid goal for one movie to be done each month. If I can get more, that will be good but for now, I’m aiming to do 10 movies (in case there are months like Fantasia Festival in July where I won’t be home enough to do it). These are the movies coming up: Dumbo, Bambi, Make Mine Music, The Adventures of Ichabod & Mr. Toad, Cinderella, Alice in Wonderland, Peter Pan, Lady and the Tramp, Sleeping Beauty and 101 Dalmatians. However, if you do have a suggestion for what to bake for Fantasia, please suggest ahead and I’ll try to figure out a way to make it happen.

Books

2016 was the year that I made the resolution to not buy any new books for the entire year to make sure that I could get through all those unread novels sitting in my Kindle and to save money. With that said, I did explore a lot of new stuff. I let myself off the hook and bought some new books during Boxing Week. Right now, its back to no more new books until I decrease the list. With that said, there is a revival and continuing through all the Kindle books. This year’s Goodreads Challenge is to read 35 books.

  • The Classics Adventure: I took a year off of this project but its back! Part of my unread Kindle books that I put off were Classics. Some titles I do want to get through: Northanger Abbey, Grimm’s Fairy Tales, A Tale of Two Cities, Treasure Island, Great Expectations, Gulliver’s Travels, Madame Bovary, What Maisie Knew, North and South.

  • Unread Physical Books: Last year, I sadly neglected my physical unread books so I’m working on that this year. One of them is trying to kickstart my Stephen King novel reading along with some other titles like Salem’s Lot, Hollow City, Ready Player One, The Fate of Ten, The Catcher in the Rye.

Movies & TV

Movies and TV is a huge chunk of here. I have to admit that and if you haven’t noticed, by the end of 2016, I was trying to slow that down a little. As much as I love watching movies, I had a block in writing reviews. It is also why I’m happy that I added in the TV Binge segment quite a bit.

  • Unwatched Movie Collection: I updated our movie collection this year and while I have stopped a lot of movie buying (saving once again), I realized that there’s a ton of movies there that I haven’t seen. This year’s mission is to get through them.
  • Other movies: New Releases (look at Anticipated 2017 Movies post HERE), Netflix Originals, Oscar Nominations (in January/February))

Miscellaneous/Monthly Segments

  • Monthly segment: Music Obsessions will stay on the first Sunday of every month!
  • Game Warp: I will continue to post up the updates to the Game Warp Podcast release. Those are twice a month usually unless there are some special segments. More info can be found on That Moment In or our Game Warp Facebook page. Also, we just set up the Twitch channel with a stream schedule coming up soon.
  • My Weekly Adventures: This is currently a biweekly segment right now. However, this comes to what I talked about earlier about resolutions. I have been doing event posts and haul and travel in separate posts, so I try to not cover those in the weekly adventures making it hard to get a lot of stuff to talk about on there. However, I like the fact that I share a snippet of my personal goals to share. You all don’t realize it but a lot of times it keeps me accountable. With that said, this year, I have set myself an ultimatum to finish my Grade 10 piano so I’ll probably start sharing that journey a little and maybe post up some piano pieces. You can criticize or not but at least it keeps me practicing piano and keeping that solid in the schedule instead of always pushing it in a lower priority. Also, I need to get back to working out and training for at least a 5 km marathon this year. So two new segments aside from Cute Kitty Moments, along with other random updates.
  • Other: Montreal Events & Unboxing

For some highlight months (which haven’t changed much):

  • January: Housekeeping and updating is going to be the priority for the first week. That includes wrapping up leftover material from 2016. Some TV binges and the Netflix A-Z.  Aside from that, I’m working on getting a domain or at least, working on an official Tranquil Dreams header by January 17th which is the blogiversary and I don’t want to drag that out anymore.
  • February: Valentine’s Marathon is the first half of the month. I’m putting together what movies to watch. It might not be romantic comedies but I will try to get The Choice to keep up with the Nicholas Sparks adaptations.
  • October: Halloween Marathon! For now, its a toss-up between a few franchises. I believe Final Destination is a high possibility at this point.
  • December: Holiday Marathon! This might have some changes seeing as the selection is getting slim.

Baking: Chewy Ginger Cookie

Holiday season is here! That means its time for me to bake up a storm. This year, I went mostly with easy solutions ranging from festive Rice Krispies Treats to Chocolate Bark (which are both no bake recipes) and then made vanilla cupcakes with store bought icing. However, I did get a little inspired and tried a new recipe from Butter Baked Goods book called “The Gingerstamp” which are chewy ginger cookies.

Ginger Cookie
Makes 24 cookies

Ginger Cookies

Ingredient

4 cups all-purpose flour
2 1/2 tsp baking soda
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp salt
3/4 cup butter, room temperature
2 1/2 cups granulated sugar
3 large eggs
1/2 cup fancy molasses
1 tsp pure vanilla

  1. Preheat the oven to 350F.
  2. Sift together the flour, baking soda, ground ginger, cinnamon, ground cloves and salt. Set aside.
  3. In a stand mixer fitted with a paddle attachment, cream the butter and 2 cups of the sugar on medium to high speed until light and fluffy. Scrape down the sides of the bowl.
  4. Add the eggs one at a time and beat briefly after each addition. Scrape down the sides of the bowl. Add the molasses and vanilla. Continue to mix on high until the molasses and vanilla are well combined and the mixture is pale in color. Scrape down the sides of the bowl.
  5. Turn the mixer to low and add the dry ingredients and mix until fully combined.
  6. In a small bowl add the remaining 1/2 cup of sugar. Use the ice cream scoop to drop 24 equally sized portions of dough, one at a time, into the sugar. Use your fingers to roll the dough around to coat on all the sides, then place the cookies on the prepared cookie sheets about 1 1/2 inches apart. Use the palm of your hand to press down lightly on the top of each portion to flatten slightly.
  7. Bake in the preheated oven for 15 to 17 minutes or until the cookies are firm around the edges but still slightly soft in the center.
  8. Remove fromt he oven and transfer the cookies to wire racks to cool.

As usual, there were minor omissions. This time, it was because I ran out of the ingredient. Those were the baking soda amd vanilla extract. However, I do know that these two don’t make a huge difference to the taste, but maybe the texture.

Cookies are about one of the easiest things to bake. Plus, I have those mini ice cream scoops so I actually have left over cookie batter to make another 12 cookies at least after making the 24.

With that said, these cookies were a crowd pleaser. I do find it a little bit of a debate whenever I make ginger anything for baked goods because not everyone likes it as much as I do. I am glad to see that everything worked out.
